Set Up the Cart : Ensure the cart is placed on a flat, stable surface. Connect the gas supply to the cart and check for leaks using soapy water or a leak detector.
Preheat the Tawa : Turn on the gas and ignite the burner. Allow the tawa to heat up for a few minutes to reach the optimal cooking temperature.
Prepare the Meat : Skewer the marinated shawarma meat onto the vertical rotisserie or spit. Place the spit securely on the gas-powered rotisserie system.
Cooking the Shawarma : Adjust the flame to medium-high for consistent cooking. As the meat cooks, use a knife to trim and slice the outer layers when they become crispy and golden brown.
Use the Tawa : Grill pita or flatbreads on the tawa to prepare wraps, or cook vegetables as needed.
Serving : Slice the cooked meat and serve it on freshly prepared bread or wraps with desired toppings (e.g., sauces, veggies).
Clean Up : After cooking, turn off the gas and clean the tawa and meat holding area to maintain hygiene.
